Inverness Sushi takes up residence at Highland capital's revamped Victorian Market

Inverness Sushi has taken up a permanent unit in the Victorian Market Food Hall, after opening earlier this month.

Serving up Japanese cuisine, the restaurant is the dream of the director, 17-year-old Barbara Danielewska.

She is a major investor in the establishment, alongside owning it with her parents Aldona Fryc and Kamil Luczak.

Ms Fryc said: “Barbara invested a lot of money in this place.

“It is down to her. She loves Japan, and learned the language all by herself.

“We originally got this place for her.”

Barbara is currently studying languages through the Open University, and works at Inverness Sushi part-time.

Having operated as a takeaway for seven years, Inverness Sushi is now moving from strength to strength in its new base.

They have signed a lease for five years, but they hope to be around for a lot longer than that.

“We reached our capacity two years ago, so we knew we needed a base like this”, said Ms Fryc.

“Being in the market has exceeded our expectations so far.

"We are really looking forward to seeing what the future brings."
