Dingwall Delicacies mystery is solved as recipe booklet stands the test of time

A MYSTERY prompted by a reader’s chance discovery of a quirky “Dingwall Delicacies” booklet cover has been solved.

The curiosity of Dingwall resident Morris Grant was piqued when he was passed the cover, which had become detached from the rest of the publication, priced at 35p.

Susan Szymborski-Welsh was able to track down a copy from her Evanton-based mum, Angela, who still has it.

She said: “I think we may have used the book to make recipes when I was little as the cake pages look quite worn!

“My husband and I were looking at it earlier this year and saw that his dad, Mr Welsh, had actually contributed a recipe for sweet and sour pork! We’re not sure what year the book was published, but it may have been in the late eighties or early nineties, when my husband’s older brother was at Dingwall Academy.

"We think the book was created to raise funds for the school as a lot of the recipes are from teachers, including the old headmaster, Mr Sandy Glass.”

Recipes range from local delicacies like “proper porridge” and bacon stovies to more exotic dishes like Australian cookies and Hungarian goulash. Unusual recipes include hare soup, tuna souffle and marak trosk, described as an old Ross-shire fisherman’s recipe for cod liver pudding.

She said: “We might try to make a few of the dishes described in the book. The ginger pear upside-down cake sounds good and only has a few ingredients!”
