A WOMAN who took over a Black Isle coffee shop business two years ago is toasting loyal customers and reflecting on the "learning process" as she anticipates the busy summer season ahead.

Laura Thompson took over Slaughterhouse Coffee in Cromarty two years ago and has since that time ridden out the unprecedented challenges posed by the coronavirus crisis and built up a regular clientele.

She told the Ross-shire Journal: "The last two years have been great, really busy and it’s certainly challenging owning a business at times but it’s a good learning process.

"I'm lucky to have such a supportive local following. Big credit to my new team this year, soon to be four of us in total to see us through the summer holidays.

"We’re going to be open seven days a week starting now! All through July and August. Back to five days September onwards."

She added: "Looking forward to welcoming tourists back and things returning to normality!

"Here’s to a fun summer!"
